What you need

oz roasted red bell pepper

lb cauliflower

tsp black pepper

pinch parmesan cheese
tsp oregano

lb chicken breast

clove garlic clove

tsp fine sea salt

pinch red pepper flake

yellow onion

cup low-sodium broth

cup feta

lemon

cup baby spinach

tsp paprika

oz cream cheese
Instructions
1. Heat olive oil in a large pot over medium heat. Add onion and garlic and sauté for 3 minutes. 2. Add cauliflower, roasted red peppers, chicken, seasonings, and broth. Add more broth if needed to mostly cover. Bring to a simmer, cover, and cook 10–15 minutes until chicken reaches 165°F. 3. Remove chicken and shred with forks. 4. Return chicken to the pot with spinach, feta, cream cheese, and lemon juice. 5. Simmer 5–10 minutes until the sauce thickens. 6. Finish with freshly grated Parmesan and serve hot.
