Instructions
1. In a bowl, mix olive oil, salt, pepper, onion powder, garlic powder, paprika, oregano, and minced garlic. Rub seasoning all over the chicken thighs. 2. Preheat air fryer to 390°F. 3. Place chicken thighs skin-side down in the air fryer basket and cook for 22 minutes, flipping halfway, until crispy and internal temperature reaches 165°F. 4. While chicken cooks, roast garlic cloves, red onion, and green onions in a skillet or under the broiler until lightly charred. 5. Add roasted vegetables to a blender with sour cream, lime juice, and cilantro. Blend until smooth and creamy. 6. Let chicken rest for 2 minutes, then serve with creamy cilantro sauce on top or on the side.
