What you need

Instructions
1. Set Instant Pot to Sauté and add olive oil, diced onion, and minced garlic. Cook for 3 to 4 minutes until onion is softened and fragrant. 2. Add the chicken breasts to the pot and sear for about 2 minutes on each side. 3. Add chicken stock, diced tomatoes, corn, black beans, salt, black pepper, onion powder, garlic powder, chili powder, cumin, and ground coriander to the pot and stir well. 4. Secure the lid on the Instant Pot, set the valve to Sealing, and pressure cook on High for 10 minutes. 5. Carefully release the pressure from the Instant Pot. Remove the chicken breasts, shred them with forks, and return the shredded chicken to the pot. 6. Stir the soup, ladle it into bowls, and serve with desired toppings like crushed tortilla chips, lime wedges, shredded cheese, sour cream, fresh cilantro, avocado slices, or sliced jalapeños.
