What you need

tbsp butter

cup cheddar cheese

tsp dried thyme

pinch salt
pinch chili flakes

pinch black pepper

Instructions
1. Whisk eggs with salt, pepper, thyme, and chili flakes. 2. Melt butter in a pan over medium heat. 3. Pour in eggs and cook until softly set. 4. Sprinkle cheese over one half of the tortilla. 5. Lay tortilla cheese-side up on top of the eggs. 6. Flip so the tortilla is on the bottom. 7. Add more cheese and fold the tortilla in half. 8. Cook until golden and crispy on both sides. 9. Rest 30 seconds, slice, and serve.
