What you need

tsp ground cumin

tsp tomato paste
lb stew meat

yellow onion

tbsp olive oil

cup beef stock

bay leaves

oz fire roasted tomatoes

clove garlic clove

tbsp smoked paprika

tsp cocoa powder

dash salt

dash pepper

tbsp chipotle chili powder
tsp dried oregano

can green chile
Instructions
1. Heat olive oil in a large pot over medium heat. Brown the beef stew meat, season with salt and pepper, then remove and set aside. 2. Brown the ground beef in the same pot, seasoning again with salt and pepper. Return the stew meat to the pot. 3. Add diced onion and minced garlic, cooking until onions are translucent (about 5 minutes). 4. Stir in green chiles, chipotle chili powder, smoked paprika, cumin, and oregano. Cook for 2 minutes to release flavors. 5. Mix in tomato paste and stir for 5 minutes to blend with the meat and spices. 6. Add fire-roasted tomatoes and beef stock, stirring to combine. 7. Stir in cocoa powder and add bay leaves. 8. Reduce heat and let simmer for 2-4 hours, stirring occasionally. 9. Remove bay leaves, adjust seasoning, and serve with toppings like cheddar cheese, diced jalapeños, green onions, sour cream, Fritos, or cornbread.
