What you need
tsp dried oregano

bunch fresh parsley

cup parmesan cheese

tbsp olive oil

tsp ground allspice

eggplant

tsp ground cinnamon

lb ground beef

cup beef broth

clove garlic clove

Instructions
1. In a large pot, heat olive oil over medium-high heat. Add ground beef and cook until browned. Drain excess fat. 2. Add chopped onion and cook until softened, about 5–7 minutes. Stir in garlic and cook for 1 more minute. 3. Add cubed eggplant and cook for 5 minutes, stirring occasionally. 4. Stir in crushed tomatoes, diced tomatoes, beef broth, oregano, cinnamon, allspice, salt, and pepper. Bring to a simmer. 5. Reduce heat to low, cover, and cook for 20–25 minutes until the eggplant is tender and the sauce is rich. Stir occasionally. 6. Serve hot. Top with grated cheese if desired, and garnish with fresh parsley.
