1. Preheat oven to 425°F. Line a sheet pan with parchment paper. 2. In a large bowl, mix all döner meat ingredients until just combined. 3. Transfer mixture to parchment paper, shape into a tight log, and roll securely. 4. Place wrapped meat on the sheet pan and bake for 30 minutes. 5. Carefully open parchment, switch oven to broil, and broil 3–5 minutes until browned. 6. Rest meat for 5 minutes, then slice very thin. 7. Serve in warm bread with toppings and tahini sauce if using.
