1. Preheat oven to 400°F. Line a sheet pan with parchment or foil. 2. In a bowl, mix ground beef with garlic powder, onion powder, seven-spice, salt, and pepper. 3. Place beef on parchment, flatten into a rectangle, cover with another sheet, and roll thinner. 4. Remove top parchment, tightly roll beef inside the bottom parchment, and twist ends to seal. 5. Pierce sweet potatoes all over with a fork and place on the sheet pan with sliced red onion. 6. Drizzle vegetables with olive oil and season with salt and pepper. 7. Add wrapped beef log to the pan and roast for 30 minutes. 8. Remove beef and onions to rest (keep beef wrapped). Return sweet potatoes to oven and roast 15–25 minutes more until tender. 9. Mix all cucumber sauce ingredients until smooth. 10. Unwrap rested beef and slice very thin. 11. Split sweet potatoes, lightly mash, top with sliced beef, roasted onions, and cucumber sauce.
