1. Remove the rotisserie chicken from the bag, reserving all the juices. 2. Shred the chicken and set aside. 3. Add vermicelli rice to the reserved chicken juices and cook until tender, following package instructions. 4. Return shredded chicken to the rice and mix well. 5. Drizzle with olive oil and add lemon juice and white vinegar. 6. Add green onions, tomatoes, cucumbers, chickpeas, and feta. 7. Mix well and season with salt and black pepper to taste. 8. Serve warm or at room temperature.
